Recipe: Hogan family Irish soda bread
Summary: Recipe submitted by Tara Hogan
Ingredients
Dry Ingredients:
- 4 cups unsifted flour
- 1 tablespoon baking powder
- 1 tsp baking soda
- 1/2 cup sugar
- 1/2 tsp cardamom
- 1/4 c. (1/2 stick) butter
- 1 tsp salt
Wet Ingredients:
- 1 3/4 c. buttermilk
- 1 egg
Instructions
- Preheat oven to 375F.
- Combine flour, salt, baking powder, soda, sugar and cardamom. You do not need to sift the flour, but it is wise to sift the soda. Add the butter and cut in with a pastry blender/fork/fingers.
- Beat the egg and mix with buttermilk. Mix wet & dry ingredients together, adding liquid a little at a time. Turn out on a floured board and knead until dough holds together. Divide dough in half and shape each half into a round flat loaf. Cut a cross on the top of each loaf with a sharp knife.
- Bake at 375F for about 35 minutes.
Variations
Notes from Tara:
I made two alterations. First, I couldn’t find buttermilk, so I substituted 1 tbsp vinegar per cup milk. Second, I added 1/2 tsp allspice. You could also add 1 cup of currants (even better if soaked in whiskey) after adding the butter.
